Bruschetta Recipe

if you’re looking for an easy recipe to prepare for a party or gathering, this Bruschetta recipe is the bomb. It gets rave reviews from my family and friends and is super easy to prepare. It may sound complicated, but it’s not.

Here’s what you’ll need:

  • Roma Tomatoes (you’ll want 10 -12 medium Roma tomatoes)
  • Sliced Red Onions
  • Chopped Black Olives
  • Garlic
  • Red Pepper Flakes
  • Pine Nuts (Optional)
  • Dried Basil or Fresh Basil Leaves
  • Grated Parmesan Cheese
  • Olive Oil

You basically slice up everything, throw it in a 9×13 inch glass baking dish, and bake the thing. Not much simpler than that.

Cut the Roma Tomatoes into 1/2 inch slices, don’t dice them. Same with the Red Onion, you want thin slices, less than 1/4 inch. We’ll take care of cutting things up after baking.

Buy a small 4 oz can of chopped black olives. Save yourself the hassle having to chop these yourself. Just be sure to drain them before adding to the dish.

You can use a few cloves of fresh garlic and finely mince them, or take the easy route and use store bought minced garlic in a jar. Pre-minced garlic is my preference as it’s all about saving time.

Spread the sliced Roma tomatoes in the baking dish, fully covering the bottom of the dish. Add sliced onion, black olives, pine nuts, garlic, basil, red pepper flakes, salt & pepper, and drizzle some olive oil over the top of the ingredients. Bake at 400 for about 45 minutes. Run a knife through the dish to chop up the tomato and onion. Add the grated parmesan cheese, and fresh basil leaves (if using) and serve with sliced french bread.

Ingredients
  

  • 10 – 12 medium Roma Tomatoes
  • 1 medium Red Onion
  • 1 tsp Minced Garlic
  • 1 can (4 oz) Chopped Black Olives
  • 1/2 tsp Red Pepper Flakes
  • 2 tbsp Olive Oil
  • 1 bag Pine Nuts
  • 1 tsp Dried Basil
  • Salt & Pepper (to taste)
  • 1/3 cup Finely Shredded Parmesan Cheese

Equipment

  • 1 9 x 13 Glass Baking Dish

Method
 

  1. Preheat oven to 400 degrees
  2. Slice Roma Tomatoes (1/2 inch slices) and add to baking dish. Spread out evenly so the entire dish is covered.
  3. Thinly Slice Red Onion and spread over top of tomatoes
  4. Drain Black Olives and sprinkle entire can over tomato and onion
  5. Add Garlic, Pine Nuts, Hot Pepper Flakes, Basil, and Salt & Pepper. Sprinkle all ingredients evenly over tomatoes and onions. Drizzle with Olive Oil.
  6. Bake at 400 degrees for 45 minutes
  7. Using two kitchen knives, run through the dish to chop up tomatoes and onion. Sprinkle parmesan cheese
  8. Sprinkle with Parmesan Cheese and serve with sliced French Bread.

Notes

  1. Fresh Basil Leaves can be substituted for the Dry Basil. Add the leaves along with the Parmesan Cheese
