Potatoes Dauphinois Recipe

This Potatoes Dauphinois recipe is one of those family recipes from my mom that I’m trying to get organized on this site. Now I’m going to warn you in advance, this isn’t the traditional Potato Dauphinois recipe that you may be looking for. It’s my mom’s recipe (could even be my grandmothers), and I’m keeping it as it was passed down to me. With that said, I’ve made this dish a few times during the holiday’s, and it’s quite delicious.

Potatoes Dauphinois Recipe

So what exactly is Potatoes Dauphinois? It’s a classic French dish of thinly sliced potatoes baked in a creamy mixture of milk or cream. It can be flavored with garlic, nutmeg, and thyme and is topped with Gruyere cheese. It’s a rich, comforting side dish that’s known for tender potatoes and golden, bubbly crust.

My mom’s recipe forgoes the thinly sliced potatoes in favor of diced potatoes. Instead of using cream she used whole milk, which gives the dish slightly less calories. She also substituted parmesan cheese for the Gruyere. Hey, it’s her recipe.

Potatoes Dauphinois Recipe

If you’d like to give this dish a shot, it’s not super complicated. You’ll need a double boiler and a 2 quart (8″ x 8″) baking dish. Here’s the ingredients you’ll need:

  • Diced potatoes (think Russet)
  • Milk or Cream (go with whole or 2% milk to help with calories)
  • Butter
  • Salt
  • Pepper
  • Parmesan Cheese
  • Onion

Note: There’s no other added herbs. But you do you, feel free to add what you want to make this more of the traditional Potatoes Dauphinois recipe.

For the potatoes, remove the skin and dice them into 1/2 inch cubes.

You’ll cook the potatoes uncovered in a double-boiler along with the milk, butter, onion, salt & pepper. This allows the milk/cream flavor to get into the potatoes without over cooking them. Cook in the double boiler over boiling water for roughly 30 minutes.

After cooking the potatoes, pour the mixture into a greased baking disk. Sprinkle with the parmesan cheese and bake at 350 degrees for 30 minutes.

While it’s not the traditional recipe, give it a shot, you may be surprised.

Ingredients
  

  • 4 cups Diced Potatoes (I prefer Russet)
  • 2 cups Milk
  • 2 tsp Butter

  • 1/8 tsp Pepper
  • 1/2 cup Grated Parmesan Cheese
  • 1 medium Onion

Equipment

  • 1 Double Boiler
  • 1 Baking Dish (8 x 8 inch)

Method
 

  1. In top of double boiler combine potatoes, milk, butter, onion, salt & pepper. Cook over boiling water for 30 minutes.
  2. While potatoes are cooking, pre heat oven to 350 degrees
  3. Pour mixture into greased baking dish and sprinkle with parmesan cheese
  4. Bake for 30 minutes

Notes

  1. For a lower calorie dish, substitute 2% milk for the whole milk
