Potatoes Dauphinois

A non-traditional Potato Dauphinois recipe with tender diced potatoes cooked in milk and parmesan cheese.

Ingredients
  

  • 4 cups Diced Potatoes (I prefer Russet)
  • 2 cups Milk
  • 2 tsp Butter
  • 1 tsp Salt
  • 1/8 tsp Pepper
  • 1/2 cup Grated Parmesan Cheese
  • 1 medium Onion

Equipment

  • 1 Double Boiler
  • 1 Baking Dish (8 x 8 inch)

Method
 

  1. In top of double boiler combine potatoes, milk, butter, onion, salt & pepper. Cook over boiling water for 30 minutes.
  2. While potatoes are cooking, pre heat oven to 350 degrees
  3. Pour mixture into greased baking dish and sprinkle with parmesan cheese
  4. Bake for 30 minutes

Notes

  1. For a lower calorie dish, substitute 2% milk for the whole milk
