Lasagna Recipe

A home made lasagna recipe passed down by my mom.

Ingredients
  

  • 1 lbs Ground Italian Sausage
  • 1 medium Onion (Diced)
  • 2 cloves Garlic (Diced)
  • 12 Lasagna Noodles
  • 6 oz Tomato Paste
  • 2 cans Crushed Tomato (28 oz cans)
  • 1 tsp Salt
  • 1/8 tsp Pepper
  • 1/2 tsp Dried Basil
  • 1/2 tsp Dried Oregano
  • 16 oz Low-Fat Cottage Cheese
  • 8 oz Mozzarella Cheese
  • 1/2 cup Parmesan Cheese
  • 1 Egg

Equipment

  • 1 9 x 13 Glass Baking Dish
  • 1 Sauce Pan (Medium)

Method
 

  1. Boil Lasagna Noodles (El dante) and set aside
  2. Brown Ground Sausage
  3. Add Onion to Sausage and cook over low heat for 5 minutes. Add Garlic and cook for 2 additional minutes.
  4. Add crushed tomatoes, tomato paste, salt, pepper, basil, and oregano to meat and simmer for 30 minutes.
  5. While tomato sauce is simmering. Combine cottage cheese, 1/4 cup of the parmesan cheese, and egg in a separate bowl and set aside.
  6. Preheat oven to 350 degrees.
  7. Grease 9 x 13 inch baking pan and layer meat, noodle, cottage cheese mixture, and cheese. See notes below.
  8. Cover with aluminum foil and bake for 40 minutes. Sprinkle with mozzarella and parmesan cheese and bake uncovered for 10 - 15 minutes. Remove and let rest for 10 minutes. Slice into 10 equal pieces and serve.

Notes

To layer lasagna:
  1. Add a small amount of the meat sauce to the bottom of the baking dish, and layer 3 lasagna noodles over sauce.
  2. Layer with a third of the remaining meat sauce, cottage cheese mixture, mozzarella and parmesan cheese. Top with 3 lasagna noodles.
  3. Repeat two more times and add remaining meat sauce to the top of the noodles
