Method
- Heat stockpot over medium heat. Add mushrooms to dry pot and cook, stirring occasionally until moisture evaporates.
- Add Oil, Ginger, Garlic, and Onion and saute for 1 - 2 minutes
- Add broth and soy sauce and bring to a boil
- Add carrots and dumplings and return to a boil for 5 minutes.
- Remove from heat and stir in Spinach
- Serve garnished with Green Onions
