Broccoli Casserole

A side-dish comfort food with broccoli and melted cheese. Ideal for the holidays or any other time of the year.

Ingredients
  

  • 24 oz Frozen Broccoli Florets
  • 1/2 Block Valveeta Cheese
  • 1 Small Onion
  • 4 oz Fresh Mushroom (or canned)
  • 1 cans Cream of Mushroom Soup
  • 1/2 tsp Garlic Powder

Equipment

  • 1 Stock Pot
  • 1 2 quart (8" x 8") Baking Dish (if doubling, use a 3 quart (9" x 13") baking dish)

Method
 

  1. Preheat over to 350 degrees
  2. Add frozen broccoli to colander, and run warm water over broccoli to slightly defrost. Chop broccoli into bite size pieces and return to colander to drain excess water.
  3. Finely chop onion and mushrooms and set aside
  4. Cube Valveeta Cheese into 1 inch cubes
  5. Saute onion over low heat for 5 minutes
  6. Add cubed Valveeta to onion and continue to stir until cheese is fully melted
  7. Add Mushrooms, Cream of Mushroom soup, and Garlic Powder to cheese mixture and stir to combine
  8. Add Broccoli to cheese mixture and stir to combine.
  9. Pour mixture to greased baking dish, top with Bread Crumbs, and bake for 30 minutes.

Notes

  1. Use an 4 oz can of mushrooms in place of fresh mushrooms to keep things simple
  2. Use Original Valveeta Cheese. This is not a low fat recipe, and 2% Valveeta doesn't work well.
